Like a bar, but healthier - Air fryer Jalapeño Poppers

Before my daughter and Covid, I used to go out, I used to be fun. I know, it seems far-fetched now! I once went to the coolest bars and clubs and drank at hole in the walls packed with hipsters. Since leaving NYC though, drinking became less a “get all dolled up” thing and more of an after work thing - mostly going to a bar that literally sat on the outskirts of my office complex at the time. This bar was barer bones than most, but its real asset was the huge selection of fried foods that you could eat under the guise of needing to balance the alcohol. My favorite on that menu is/was jalapeño poppers. Crispy, fried cheesy things that were a Russian roulette of spiciness dipped in ranch dressing.

Now that I’m no longer working there and don’t go out the same way, I made my own version - still crispy and cheesy, but no smelly oil in the house. The ingredients will vary based on how many you are making.

 

Ingredients:

Jalapeños, cut lengthwise and stemmed/deseeded

Cream cheese (1 ½ tsp per jalapeño half)

Panko breadcrumbs

Egg, beaten with a TB of cold water

Flour

Salt and pepper

Neutral oil spray (I use avocado oil)


Optional add-ins (let your imagination run wild):

Bacon, chopped

Shredded cheese (Monterrey Jack or cheddar would be good with the bacon)

Sausage, broken up into fine pieces

Shallots, finely chopped and sautéed

Crab (ala crab rangoon)

 

Clean your jalapeños and ready them to be stuffed. If you are adding “mix-ins”, smush them together with the cream cheese in a bowl. Fill your jalapeño halves with cream cheese.

Put together your assembly line and get ready to get your hands dirty! You’ll need to start with a cup of flour mixed with salt and pepper on a plate, then the beaten egg in a bowl, then another plate with panko (about a cup). (If you’re making a ton of peppers, you’ll need more).

Dip the jalapeño halves in flour, fully coating all sides. Then, dip in the egg fully. Repeat flour and egg then dip into the panko and fully coat. Set aside.

Preheat your air fryer to 400F (if you don't have one - get one!). Place jalapeño poppers in the basket and spray with avocado oil. Cook for 7-8 minutes, until golden and crispy. Dip in ranch and enjoy!

It's quick and dirty, just like the bar that inspired the recipe! Enjoy!
